Spreewald pickled gherkins

Spree forests pickled cucumbersIngredients:
  • Screwing glasses
  • 3 kg of small, solid cucumbers
  • Spices, as described below

and Go

  • 3 kg of small, stack solid cucumbers in screwing glasses.

To this per glass

  • 1 to 2 teaspoon of mustard seed
  • dill minced more freshly
  • 1 onion quartered or in plates
  • 6 peppercorns
  • 2 all spices corns
  • perhaps tarragon
  • perhaps 1/4 bay leaf

Bringing these spices to the boil together

  • 1 litre of vinegar (10% acid amount or gas vinegar.)
  • 5 litres of water
  • 2 handsful salt
  • 500 grams of sugar

Pouring brine cooled off about this so that the cucumbers are covered completely. Boiling down 10 to 15 minutes.

A crisp, delicious addition for your larder.
