Spreewald pickled gherkins
Ingredients:
Screwing glasses
3 kg of small, solid cucumbers
Spices, as described below
and Go
3 kg of small, stack solid cucumbers in screwing glasses.
To this per glass
1 to 2 teaspoon of mustard seed
dill minced more freshly
1 onion quartered or in plates
6 peppercorns
2 all spices corns
perhaps tarragon
perhaps 1/4 bay leaf
Bringing these spices to the boil together
1 litre of vinegar (10% acid amount or gas vinegar.)
5 litres of water
2 handsful salt
500 grams of sugar
Pouring brine cooled off about this so that the cucumbers are covered completely. Boiling down 10 to 15 minutes.
A crisp, delicious addition for your larder.
