Pike in Spreewald horseradish sauce
- Approximately 1.5 kilograms of pike
For the liquid
- 2 parsley roots
- 2 bay leaves
- 2 carrots
- 2 onions
- Salt and pepper
For the sauce
- 350 grams of grated horseradish
- Fresh parsley and dill
- 2 soup spoons of vegetable oil
- 2 soup spoons of sugar
- Lemon juice
- 6 egg yolk
- Salt
Preparation
Chop the ingredients for the liquid. Then boil it with water, add the the pike safely and boil it approx. 20 minutes. (Fish must be covered with liquid)
After that the liquid has to be saved. Stir all ingredients for the sauce and boil it with the liquid to give fresh parsley and dill up.
Serve the pike on the plate, add sauce and garnish with slices of lemon . Serve potatoes with parsley.
